User Interface on the bottom...

Will there be a way to minimize it so we don't have to look at it all the time?

Also will it be different depending on each race you are playing? Not the layout so much as the color/theme.

I'm pretty sure that it has been said that you can make all of the interface go away if you want.

There isn't currently a button on the GUI to make it go away (yet) but you can hit ctrl-shift-z to make it disappear. Skins for each race are in development. Only the TEC one has been shown so far.
