A lot (if not all) of the performance meters use the in-built Windows PerfMon interface to access this info. If it's not in there, it's not likely that it can be easily made into a docklet or widget.

You can see what Windows (XP, at least) provides you by running:

mmc C:\Windows\System32\perfmon.msc form the command line. Select "Add..." and a dialog will popup with all the 'monitor-able' items that could be accessed by widgets/docklets.
