is there a list somewhere of all the ships available with the individual research requirements for each ship?

See the sticky about the Galactopedia, it should tell you what you need. Though you really should design your own ships--the 'core' ships are more for demonstration than anything, and if you want to compete with the AI above the lowest difficulties you really need to have more adaptable ships.
