You can, it's just hard to tell if the units are actually following the orders.

Meh, if you don't need it, don't use it.
Don't have the game here now, but can't you hold down the key for queuing commands to show the lines? (think it's shift/alt??)

The thing I like the most about SoaSE is that it's paced slowly enough and production and such is easily accessible enough (although the latter could be better) so that I've never really needed to pause.
