can you undo packages

I usually just pick out the icons I want from the package, but what if i install a package and I don't like it? Can I get back to my original state (which includes some custom icons)? Also, is it possible to install only part of an icon package?

Yes , its possible.
Open iconpackager, select icon that you want, change own icon, then apply theme, or save as.
In this way you create your own package.( personal use only)

hmmmmmmmmmmmmmmmmm, that;s not exactly what I was getting at. If I apply a theme and I don't like it, what happens? Can I undo it?

Well, You can always choose another theme.
