Can you continue?

Can you continue the game after you have already met one of the victory conditions. Say for instance I reach a cultural victory, can you still play on if you wish, to conquer all other civs, without the score beind added up beyond your victory?

I should note, I haven't gotten the game yet (waiting for it to find its way through snail mail to my door).. but this question has been on my mind.

Nope... you can only set the victory conditions at the start of the game. This is fair enough, as (presumably) the AIs take the victory conditions into account when deciding what to do.
