Does quantity of resources matter for science claim

If I am building a farming structure, and I am playing as science, does it matter how many water resources are on the target space?

Or will the outcome be the same regardless how much water is present?

In other words, am I better off building a FARM on a one-resource water space, reserving the three-resource water space for actual water extraction?

No it does not matter. One of the primary aspects of scientist is that they need a large number of tiles, but are indifferent to the quality of those tiles.
