Start11 Windows 10 Style Resizing

Is it possible to resize the Windows 10 style start menu so that it only has the all apps list like you can in Windows 10? Also not sure if this is a me thing, but the "new" label on apps doesn't disappear even if I open said app. Can I request to have an option to disable this actually? It always irks me.

This is on Windows 11 Pro btw
