I am on version 2.5 of Start11. When I add a folder to the taskbar (Win11 23H2), I am unable to change the icon. I set the icon that I want but it doesn't change it.

Try restarting Explorer and see if it changes. I have found it's best to change the folder icon before pinning it to the taskbar.
