I'll kick it off with a simple one:
When you wipe out (benevolent genocide - don't you love it) another race;
Before the end of the turn go to the dippy screen and you'll see that they are still there even though they have no planets left, this would be a good time to pursue peace, so offer a peace treaty and also suggest they give you all their money and any techs they may have lying about, they will almost always agree to a (somewhat belated) peace treaty leaving you quite a bit richer.
