Menus with short/truncated entries

I'm trying to make NeXT-style menus for a theme (a lot harder
than I thought) and am having problems with menu items
being short, jumbled, or truncated.
I've included a screen shot (first post so I don't know if
image will be here).
When I first started this I was working from no docs regarding
how to make menus so it was trial and error all the way.
If it wasn't for dealing with separators I'd have the menus
looking they way I want (with the menubackground providing
the sectioned look) but it was a no-go.
As it stands the menuitems are a bitmap instead of a more
desirable transparent thing.
The first menu shows the menuitems jumbled with keyboard
shortcuts and the second shows a truncated menuitem.
Some menus, such as Favorites in a browser will show just
fine with long entries but the majority show problems.
Any tips on menu creation here, like any added entries
that SkinStudio doesn't provide?
