I ended up stuffing them with the following.. rice ground beef chopped onions diced tomatoes bread crumbs garam marsala garlic salt pepper I melted cheese over the top of the whole thing. Wish I'd precooked the zucchini first. Didn't think of it. It was crunchy. Not bad... but not great. Would have been better cooked more. Thanks for the suggestions... Excellent article, Tex. The honesty you've put into it is refreshing. Growing up in a rural New England town, my children haven't had much exposure to those of other races, but they do certainly have more than I had at their age (in the same town). Thankfully, it doesn't seem to be an issue here - for most, anyway, and I'm grateful.
