Quick check, did you change the tab at the top of the planet build list to show "old" buildings? It's possible (it's been a while since I played the campaigns) that basic labs are the only obsolete building you start with, which is why they are the only ones showing up on your build list.
The starport can be set to build the same ship model after finishing the current ship. IIRC there is a checkbox in the options menu to change this, although this is "on" by default, so you would have needed to change it to get any other result. Crud! I've been building substandard arrays - I hadn't noticed the modules you need battlestations to build. OTOH, can you confirm the necessity of one point defense on ships in the array? I have whole classes of ships that only have weapons, and the fleets show a substantial defense rating. Also, my preferred method of populating the array is usually tiny hulls. It happens all the time. IIRC it's been added to Stardock's master pile of things to look into for version 2.0 For now, be aware of it and make sure you don't screw yourself. The correct amount will show up in the bottom windows of the trade screen, or just click the up/down button to show the entire amount.

It's generally a non-issue. Water vapor is a huge component of gas/diesel exhaust, and we don't seem to have this problem. Hell, the military is experimenting with a system to condense the water vapor from humvee exhaust into potable water so soldiers have to carry less of it. IIRC you can get 1-2 gallons of water from each gallon of fuel.

This issue has been brought up before, and IIRC Stardock has said it's in their to-do pile. Each race has to be gone through and have these modules enabled on appropriate techs, or in some cases have the lack of these modules as part of their racial uniqueness. Part of the problem might lie in tech trading, as it may become possible (when these modules are implemented for the races currently lacking them) to get multiple techs enabling the same or parallel modules, allowing more modules
