I just started to follow a tut in the WinC Wiki about making a start menu. It says to create an image of the start menu and then divide it up into 5 pieces. The pic there shows guide lines that divide it into 8 pieces. The explaination of what the pieces are is not very clear. Just thought I'd add that I am having the same trouble. I notified Stardock of the issue.
If you do decide to make a black shiney one, how about pairing that up with a soothing color like Windowboxx. I have that blind, and I put black icons with it. It looks great! Mixing the black shiney things and the muted soothing colors would be awesome. :D

If you are just changing the icon to a new one, just right click on the icon. A menu will pop up, go down to "Dock Entry Properties" at the bottom. That will bring up a window, choose "change image" and brouse to where you have the image stored. Is that what you needed?

I'm planning on looking into Iconpackager tonight, just to see what it does and how it's all set up. I still need to organize my docks too. I installed Plus last night too, and I have not had any time to fix it up real pretty. :D
Well.....I'm gonna go see my family on Christmas, so I guess I'll have 2 1/2 days.
