Go to your ObjectDock config window. Press on the "My Docks" button at the bottom-left of your screen. Select the dock you wish to remove, then press the "Remove This Dock" button on the right of the window. Also, when you select a dock from the list (on the left), OD will display a big bouncing arrow pointing toward the dock you're about to edit.

My latest skin has a fairly elaborate design in the start menu, though on the surface it may not seem so. It was pretty tricky getting the lines and shading to line up properly. The advice I would offer would be too lengthy here.
