As was mentioned, there was a thread on this previously, they don't have plans to do it. Its pretty expensive for a game like this if you don't plan on doing it from the beginning, unfortunately. (Almost everything in software is like that, the earlier on you decide to do something, the easier/cheaper it is.)
Warcraft 3 and Starcraft 2 are very much not alike. Starcraft 2 is meant to be more like Starcraft 1, Warcraft 3 is... well, I'm a major Blizzard fan and I didn't care for it either. Having to basically play Diablo by running my hero around getting items and levels was pretty silly in an RTS. I don't think Starcraft 2 is going to suffer from that problem.
You probably don't want to do the research to increase the population limit right away. Especially if you're Vasari or TEC, you can get long range missle ships (LRM) easily (one millitary lab for Vasari, two for TEC). Those ships are a great compliment for your early fleet and help out quite a lot. The TEC colonizer's bonus is free extractors, but I think you need rank 2 colonize before you get one (so a level 3 ship). Not that great really. For me, it really depends on whats going on. If the first thing I'm colonizing is a couple asteroids, the colonizer ship is great. If its something like a desert world thats heavily defended, a battleship is going to do better at clearing the area.
Its faster with higher level capital ships, as their cultural suppression goes up with levels. Beyond that, I'm not sure how to quantify it. I've never seen a score anywhere showing what the total culture of a planet is in the first place (only the current output), so I don't know how to figure out how long it'll take to go down. I like killing Pirate bases because once colonized they have a plundered booty income bonus, and since there's only ever one phase lane in, they don't need guarding. The most important thing seems to be high level cap ships, really. Pirates can have mass fleets, but they're just straight up attack ships. They don't have abilities. Locking teams removes the missions and forces whatever teams you start with to stay that way all the time. Unfortunately if you're playing a 1v1v1 FFA type match (which it sounds like you are), it doesn't really help.
I think people need to get past the idea that 'slowdown' is the problem here. Its not. You can expect the graphics to slow down if your hardware can't keep up. But I think its reasonable to expect that combat still work on any system that meets the required specification, even if its going at 5 frames per second. The problem the OP had is that ships stopped doing or taking damage.

To me, the mistake is in research. The Vasari LRM type ship is 1 weapons lab away (IIRC), which you could have gotten to instead. Those things are MUCH heavier hitters then the skirmishers. Arctic colonization is expensive, best to pick it up later.
Playing on the same size maps (small), the full version will work the same way. If you try to scale up to large maps, you may run into framerate problems because on a big map the ship battles can get *MUCH* larger. (On my current map I have three fleets and nearly 2000 supply worth of ships. On the demo maps you'll likely never get to that point before winning or losing.)

There seems to be two ways to use the market. The simplest one is the big buy/sell buttons at the top. You use those to immediately buy/sell at the current market price. The market seems to be infinite in supply, but what you buy/sell influences the price. There's smaller buttons at the bottom that are another way of buying and selling, but I don't understand how they work.

The amount of income is determined by the longest unbroken trade route (systems connected together by tradeports without a broken link in the chain). The simplest way to deal with them is to say that they're awesome, and to put one at every planet/asteroid you control.
