It's a known "bug" that Windows 7 takes forever to find updates if it hasn't been updated in a long time. There are official patches to solve this: http://www.askvg.com/fix-windows-7-keeps-checking-for-updates-for-hours/ I think MS updated Windows Update Client so you need the newest version to download updates.

The Users folder (and sub-folders) is part of the system so I would advice against it. Better leave it and just move the folders you have created yourself to your HDD.
