As far as I know, Best Buy doesn't have any special content. It certainly isn't mentioned on their website. Although granted, their website is completely F---ed up in regards to Elemental. It lists a different publisher and has no pics, but the prices for it and the limited edition are right, and the real release date (8/24) is also correct.

There are flying creature, but there aren't flying units in the sense that you can't build a massive army of knights on flying horses or whatever. They are rare and hard to come by, but they will exist.

As the game isn't out yet, no, no one has any definative answers for your questions. And the devs are almost certainly too busy finishing the day 0 update and such to answer questions. The interface can apparently be changed with DesktopX, but no one knows how much.
