Some spells/items have instant cast. Interrupt does nothing here. Other spells/items (including scrolls) have a casting time usually between .3 seconds and 3 seconds. If you interrupt while they're casting, the spell/item doesn't cast. In addition, it goes into cooldown. So if my teleport scroll is interrupted, I don't teleport. I have to wait 30 seconds to try again.

The best way to survive early game is to pump health: Blood of the Fallen. Use your health to stay alive until you can get Mageslayer or Ashkandor and then go offensive. Mard's Hammer works better early game. But as your DPS scales up, Furious Blade becomes more effective. Choose according to your play style and where you have the most difficultly. Especially when you've got other +attack speed gear to allow it to proc more often, Furious Blade helps.

Meh. I haven't played it myself so I can't speak authoritatively... but Enhanced Attributes doesn't seem like a viable replacement for other skills. I'd rather take Lv 1 AF for creeping and Lv 1 SS for killing towers than get a small stat boost.
