I don't believe you can password protect a Fence. You could create a new "Desktop Page" in Fences and keep this Fence on that page. That way it would be hidden from prying eyes, unless they knew how to change pages.

I was not sure if you were doing a trial or owned Start11. If you are new to Start11v2, there is a little bit of a learning curve in navigating the Configuration app. Start11v2 is a very powerful app with many customizations. I use the Windows 10 Style menu with 233 Shortcuts and 27 Tabs. I can get to anything I use on a regular basis with two clicks. If you need any more help, you know where to find it. Here's how I use this feature: 1) Create a new folder somewhere on your C: drive, and name it appropriately. 2) Change the icon for this folder to what ever you like. 3) Create shortcuts for all the apps, folders, and files you want to include in this menu, and place in the folder created in #1 4) Change the icons for the shortcuts as you like 5) Rename the shortcuts as you like (The items in this folder will be arranged alphabetically

There are a lot of third-party apps that allow you to change the rotation metadata in a batch process. Just do a search on the internet, and you will find several. ...and yes, it would be helpful if this irregularity was fixed in the next release of DeskScapes. Basj has forwarded this issue to the Dev's for review and possible inclusion in DeskScapes, however, it's been at least a year since this program has been updated.

Not exactly sure what you mean, but if you right-click on an empty space in the portal Fence, or right-click the portal Fence tab, you should see "View" in the context menu. Just choose the view you would like to set for the portal Fence.
