I haven't played with this setting but it looks like unchecking it might do what you're wanting (?):

The start button on Persona is colored using the Accent Color. Is your Accent Color set to a grey?
Well thankfully that didn't take long. I don't know if it's "Right" or "Wrong" but I can tell you what fixed it- In Start10, on the main page "Style", in the "Settings" dropdown I had picked a custom color. Clicking on "Reset to automatic color" fixed it. Clicking around and trying a few different colors doesn't seem to matter, it seems to be merely having a custom color set causes white text which didn't catch my eye on dark skins. Thanks.
