There are several victory conditions, but you can select which ones to have open at the beginning of the game. For instance, you can turn off the Technology Victory condition if you want to keep playing past the end of the research tree. So if you want to play for a military victory, you can turn off all other conditions. You only have the option at the beginning of the game though. Once the conditions are set, they're set.
