Thanks for the report, we have reproduced it and will have a fix for this in the upcoming 2.5 release. As a short term solution you can disable Start11 enhanced taskbar, or set it to combine mode.
The latest Start11 beta that came out yesterday adds in control over icon size, button height and width via registry keys. Change log notes have the details.
Are you using a wired connection or wireless?
That sounds like a massive resource leak stopping everything painting correctly. Are you sure the desktop icon part at least doesn't happen without Start11?
I am pleased to say we have modified this for the Win10 style in the next S11 update as the all apps text was not in the original Win10 menu. It will show if you are filtering the list however and for Win11 menus where it serves a purpose to return to the apps page.
Uninstall Start11, REBOOT, and then reinstall Start11.
The delayed response is probably connections not working in the background and being dropped constantly.
Do you use normal seamless or using hotkeys to switch pcs?

Why you do believe Start11 is crashing? If you have a dmp file or data from the event log we can investigate further.
Please note it is not recommended to use Groupy 1 on Windows 11. It was not designed for that OS and may not work entirely correctly. Groupy v2 does support Windows 11 though (and 10)

What does the error message say?
