We can only show what the OS says is the cursor and as I recall with no physical mouse it fails to tell us about some cursors. There is the OS accessibility option to use arrows as a mouse which may resolve this and look like a mouse.

You may need to reboot. The Windows menu is prone to not working especially if explorer has been restarted.

Agreed. This is nothing to do with Start11. It cannot alter which account logs in.

The beta is now a release build. So you need WB 11.04.
A good start would be information on other software installed, especially anything which impacts explorer or the taskbar.
Windows does not let you pin folders to the taskbar. You can only pin applications. If you use Start11 you can pin a folder to the taskbar using the Start11 configuration screen though.

My general advice here is it is best not mess with critical Windows services as doing so can break things. Have you recently disabled any services? Also is the Start11_64 process running in taskmanager?
This is entirely normal. On Windows 10 menus the smallest icon size does not show text because it is sized small enough for the icon only. This is how it works on Windows 10 too.

That list is provided by the OS so we have no control over it. But that looks like a tooltip rather than a clickable list suggesting the list itself has never appeared. First step would be to uninstall Start11, reboot and then install the 2.52 beta of Start11 that's available now. That rules out any install issues.
Does your computer have a touch display?
Do you have Stardock WindowBlinds? If so, it is that which needs an update to 11.04 due to a preview patch your computer installed.

I am curious as to why you using such an old version of WindowBlinds? If you update to 11.04 this will be resolved as it was caused by the most recent pre release patch Microsoft released for 23h2 and 24h2.

Do you have any software which might add bars or docks to the screen or alter the taskbar? Also how many monitors do you have?
